What happened???
Like the reviews before, this place has gone wayyyy down hill. the new menu sucks, the prices are higher and its no longer a special treat. I've been going for years and the food was always excellent. No more. If its new management, you really should leave - you messed up a great place. Thank god they still have the chocolate soufflé -- it would have been a complete disaster if they dropped this too. Please bring back my favorite hot crab dip with Triscuits.

New Menu is a flop
A recent change to the menu is a huge disappointment to this formerly loyal customer. They cut the number of items in half (no more fondue, ribs, daily soup& stew), and some of the old favorites that remain like the mac'n'cheese, guacamole, and cuban sandwich are noticably of lower quality ingredients. No longer someplace special, now just some place.

What's with the price hike?
Yes, to what the previous reviewer said. The Boston Lettuce Salad is lettuce, a couple of very thin slices of pear, some balsamic vinegar and a light sprinkling of bleu cheese and hazelnuts. It tastes good, but $17? It's actually an insult. The Lobster Salad is $19. Can someone please explain the pricing here? I think this place would do well to adjust, like everyone else, to the economic situation and return to the expensive prices they charged before instead of these newer, absurdly overblown prices. Very disappointing.

Agree with UES Regular, just too pricey
This place is just too expensive for what you get. Guac really is $16 and it is not transcendent as people suggest, just made fresh. A cuban - which they admitted was pre-made when my date asked for them to hold an item - is a $16 glorified grilled cheese. It was tasty, but isn't all grilled cheese tasty? The baby back ribs were well priced at $16, but you get 3 ribs and flavorless cole slaw. I don't mind big prices as this is NY after all, but this place is really pushing it. And as said below, it is not a hip young crowd, but an old money group trying to stay hip. When you look around the tiny space you see how simple the decor is and you start to realize you are getting taken for a ride. Our boston salad was $17. The cheapest Red was $12 a glass.

Delicious
The bar at Etats-Unis is not a cheap place to eat, but it's still a good value for nyc. And that isn't counting the funny, intelligent staff and cheers-like atmosphere that the regulars lend. Chat with the bartender, say hi to the chef if he isn't too busy (it's a one man show), or introduce yourself to one of the managers and your name will be known. I love the beef salad, miss the white chili and burratina, go crazy for the soups, and always enjoy the specials and the food from the restaurant across the street. It's also nice that all the menus change and that they're not stuffy. It is after all a place with a staff of three so things happen (which they handle with humor and grace), but that makes it a wonderful hold out from the big corporate culture trend we all deal with every day.

That was then, This is Now..
I have been to this place many times over the years and loved it for the most part - great food, service, and atmosphere. It was a little more expensive than other places on the UES, but it was well worth it. The last few times I have been here the food quality has taken a huge nose dive, the service deteriorated, and the prices have risen to 3 star midtown prices. $16 for guacamole? Outrageous pricing for an avacodo that has been mushed up in bowl. It's not just that, the entire menu is overpriced and likewise the crowd has shifted from a young and hip crowd, to an older, rich, certain le bernadin crowd. This place was the best and now it is time to go elsewhere.
