Superb hole in the wall
Grab any empty seat and the counter girl will come take your order. Order the #1 house special soup that's filled with tender meats of different varieties (tripe, ox tail, tendon etc). Soup and noodles are superb. Can't beat this for only $6.

In non-tourist section of Chinatown...
...there is some of the best spicy beef noodle soup in the city. We tried their hand-pulled noodles and a lamb (non-soup) dish. The lamb was so-so - we'll stick with the noodles next time. The broth was flavorful and spicy and the noodles were nice and chewy. We ordered the beef tendon mixture and the tendon was just perfect (i.e. melt in your mouth). Here's an off the menu tip: we heard someone order and receive a bowl of hand-shaven noodles, and they looked really good. Plan to try them next time.
