    Not Worth The Expense

    The smell is great and on the surface, this place looks like a lot of fun; but the utterly confusing/annoying and completely unnecessary "meal ticket" method of dining, the slow, unfriendly services and the over-the-top prices makes this a place to avoid. Definitely a novelty restaurant for out of towners, not for the locals.

    Disappointing Customer Service

    I went to Hill Country on Monday and now 2.26.09, today Thursday. I was extremely disappointed on Monday so because I work in the area and love the food and send clients over at least twice a week I gave it another shot. Monday I brought a cornish hen back to my table to find after cutting into it that it was undercooked and pink in the middle. In exchange I got the 1/4 chicken instead. Once I brought my card up to get the mark up corrected from the cornish hen to chicken the carver gave me a hard time saying, "Well you cut into it so I had to throw it away." Not wanting to cause drama I went to the counter to pay and the Manager Dana was less than friendly and with no apology took it off the bill. The next day I call to comment on the experience, received an apology and I rejected the offer for a gift certificate. I go back today and let the manager know I was there as promised I would do so next time I were to dine there. Long story short- I go to pay - drop off my card and notice my co worker and client got stuck paying for their meal. I was so embarrassed! Why would you comp just one person , let alone a client and even write comp on their cards then make them pay. I will never return here again. So disappointing. Go somewhere else where they appreciate your money.

    Good but pricey

    I liked the food. I sampled every beef item on the menu. However, these are HUMBLE cuts of beef (aside from the Prime Rib) and I’m paying top dollar. Brisket is cheap (<$6/lb) and they sell it for $22/lb. Hill Country sells the prime rib for 29/lb - that’s just as much as steakhouses but the steakhouses give you a plate and good service where HC puts it in butcher paper and serves it cafeteria style. It’s good stuff but it’s way overpriced. I know to not expect all the frills of a nice restaurant at a ‘cue joint but even still, a buck doesn’t go far in this place. Good food though - if you don’t care about splurging, it will cure your craving.

    Great informal BBQ spot

    I have been to most of the BBQ places in the city... I personally think that Dinosaur is the best but if you don't want to make the trip uptown then Hill Country is your best bet. GREAT brisket (moist, not lean). The sides aren't amazing, the mac and cheese is very good but make sure your sides are hot (sometimes they aren't because they are all sitting out). Atmosphere is perfect for what it is, its relaxed hence the not-so-great service but honestly its not Jean-Georges its bbq.

    Review of reviewers

    It never ceases to amaze me that so many reviewers write about the decor, service, veg options at a BBQ restuarant. First of all this is BBQ. If you want nice cutlery, table clothes and service with a smile than go somewhere where that matters. Don't step foot in a BBQ joint and expect anything but good slow cooked meat, if you can't appreciate that it's ok but why would you expect anything else? You live in NY- I would venture to say there are plenty of places you can find what you're looking for and it isn't bbq. This place has the best bbq in the city i've been to.

    Not worth it, subpar service

    Food was ok, service was horific. The waitress had one job: take our drink orders. She ignored us the entire time, despite asking other staff members for help. Flies all over our table, hostess seemed to care less. I would never go back here, wasn't fun or that enjoyable.
