Those who say the Brisket is average or "not real brisket" have no clue what they are talking about. Granted, the "lean" brisket isn't great - so don't get it. The moist brisket is the best I've tasted outside of Texas...

...but that's not really the point is it? The lunch special beef "brisket" sandwich is alright, pretty decent value for a sandwich, a nice helping of a side, and some pickles. Sadly, the "brisket" seems like regular old pulled beef, and the sauce is WAY too sweet. And the coleslaw has nothing going on for it. The quest for a delicious bbq lunch continues...

So let me start this off by saying that I ate here after coming from the Big apple bbq (in which some of the best pitmasters in the country to come bbq in nyc). So needless to say I had some pretty damn good bbq. So it was a great measuring stick to see how good Hill Country's food is. We got the pitmasters combo which has a little bit of everything. What i would recommend: The brisket and beef ribs were amazing, for sides: mac & cheese and the sweet mash pot. after coming from big apple bbq the pork ribs at hill country tasted dry and tough. overall the food was good, the atmosphere was very relaxed (although waiting on line for ur food was a pain).

had dinner here recently and I felt like they were herding us like cattle....stand in line here to get a table, then stand in line to get meat, then stand in line to get a side, then dessert, and then to pay. if you want to enjoy your dinner don't go here. ribs were so tough i couldn't get the meat off the bone. won't go back. lots of tourists with their kids.

I was there last night with a friend for their "All U Can Eat" monday special, ( is not really ALL you can eat) which is limited to chicken, brisket(can't call it real brisket) and pork ribs. Very mediocre food quality including the sides, could be a good venue for their live shows but do not waist your time if you're hungry for Real BBQ meats!

Hill Country is the best bbq in the city! I go at least a couple of times a month, and I have NEVER had a bad meal. Fav sides include the mac&cheese, green beans and chili. The beef ribs and brisket are moist and to die for! My only complaint is that the desserts seem to be overpriced- I like the banana pudding, but it would be nice if it wasn't the fake box kind. The service is a little odd- waitresses make it strange b/c they seem to overly monitor patrons (awkward staring!) and clear the tables while you're still eating. The tipping policy is always vague, but I always find the host/hostess to be very friendly and accomodating of seating requests. Make sure to try the wild boar when available!

The smell is great and on the surface, this place looks like a lot of fun; but the utterly confusing/annoying and completely unnecessary "meal ticket" method of dining, the slow, unfriendly services and the over-the-top prices makes this a place to avoid. Definitely a novelty restaurant for out of towners, not for the locals.
