Monte Enebro soft goat, spain. it is creamy, lemony and slightly acidic; as it ages, the texture becomes denser and the flavor becomes more intense with a pungent finish.   
Holzhofer hand raw cow, switzerland. buttery flavor and mineral well marked its crust is brown and the unmistakable scent   
Roncal hand sheep, spain. it has a sharp flavor, slightly spicy and very buttery on the palate, which is achieved by ageing the cheese for over 4 months   
Ubriaco De Piave firm cow, italy. the cheese is creamy, light, and mildly acidic with a stronger flavor near the rind   
Camembert soft cow, france. the cheese is bathed for 40 hours in his personal mix of wine must comprised of cabernet, merlot and raboso to form a rough, violet rind which still has remnants of grape seeds and leave. it is sweet with a fruity finish and has a fragrant aroma
